Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg, lemon zest, and lemon juice; mix until combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until well combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart, and bake for 12 minutes or until lightly golden around the edges.
- Allow cookies to cool before preparing the frosting by mixing softened butter with powdered sugar, lemon zest, and lemon juice until smooth. Adjust consistency with heavy cream if necessary.
- Frost cooled cookies generously and let set before serving.
