Instructions

  1. Wash the cherry tomatoes and cut them in half.
  2. Dice the cucumber and thinly slice the red onion.
  3. Pit the Kalamata olives if needed.
  4. Crumble the feta cheese and chop the parsley.
  5. In a large mixing bowl, combine tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  6. In a small bowl, whisk together olive oil, apple vinegar, oregano, salt, and pepper to create the dressing.
  7. Pour the dressing over the salad mixture and toss gently to coat evenly.
