- 2 cups cherry tomatoes

- 1/2 cup Kalamata olives, pitted

- 1/4 cup fresh parsley, chopped
Instructions
- Wash the cherry tomatoes and cut them in half.
- Dice the cucumber and thinly slice the red onion.
- Pit the Kalamata olives if needed.
- Crumble the feta cheese and chop the parsley.
- In a large mixing bowl, combine tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, apple vinegar, oregano, salt, and pepper to create the dressing.
- Pour the dressing over the salad mixture and toss gently to coat evenly.
- Serve immediately or chill for about 30 minutes for enhanced flavor.
