- 2 cups cherry tomatoes
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Wash cherry tomatoes and cut them in half. Dice the cucumber into small pieces and thinly slice the red onion. Pit the Kalamata olives if necessary, and chop fresh parsley.
- In a large mixing bowl, combine tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, apple cider vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly. Serve immediately.
