Instructions
- Prepare Raspberry Syrup: In a saucepan, combine raspberries, water, sugar, and lemon juice. Simmer for about 10 minutes until berries break down. Strain to remove seeds and cool.
- Make Mascarpone Filling: Whip heavy cream until stiff peaks form. Blend mascarpone with sugar until smooth, then fold in whipped cream, raspberry syrup, and vanilla extract.
- Assemble Layers: Quickly dip each ladyfinger into cooled raspberry syrup and layer half in a dish. Spread half of the mascarpone filling on top; repeat with remaining ingredients.
- Chill: Cover and refrigerate for at least 6 hours before serving. Garnish with grated white chocolate.
