  • 1 cup pomegranate juice
  • 2 tablespoons honey
  • 1 teaspoon balsamic vinegar
  • 1 cup Greek yogurt
  • 1/4 cup fresh mint, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste

Instructions

  1. In a large bowl, combine ground lamb, onion, garlic, parsley, and spices. Mix until just combined.
  2. Shape the mixture into long oval patties around pre-soaked skewers.
  3. In a saucepan over medium heat, simmer pomegranate juice with honey until thickened.
  4. Whisk together Greek yogurt, mint, olive oil, lemon juice, and salt in a separate bowl.
  5. Preheat the grill to medium-high heat and brush koftas with olive oil before grilling for about 6-7 minutes on each side.
  6. Brush koftas with pomegranate glaze during the last two minutes of cooking.
  7. Serve warm with chilled mint yogurt.
