- 1 pound ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper, to taste
- 1 tablespoon olive oil, for grilling
- 1 cup pomegranate juice
- 2 tablespoons honey
- 1 teaspoon balsamic vinegar
- 1 cup Greek yogurt
- 1/4 cup fresh mint, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt, to taste
Instructions
- In a large bowl, combine ground lamb, onion, garlic, parsley, and spices. Mix until just combined.
- Shape the mixture into long oval patties around pre-soaked skewers.
- In a saucepan over medium heat, simmer pomegranate juice with honey until thickened.
- Whisk together Greek yogurt, mint, olive oil, lemon juice, and salt in a separate bowl.
- Preheat the grill to medium-high heat and brush koftas with olive oil before grilling for about 6-7 minutes on each side.
- Brush koftas with pomegranate glaze during the last two minutes of cooking.
- Serve warm with chilled mint yogurt.
