- 20 oz cheese tortellini, uncooked
- 10 oz cherry tomatoes, halved
- 8 oz Mozzarella pearls
- 1 c chopped spinach
- 1/4 c chopped basil
- 1/2 c olive oil
- 2 T balsamic vinegar
- 3–4 garlic cloves, minced
- 3/4 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Boil salted water in a large pot. Add cheese tortellini and cook until al dente according to package instructions.
- Drain the tortellini using a colander and rinse briefly under cool water.
- In a mixing bowl, combine chopped spinach, halved cherry tomatoes, mozzarella pearls, basil, and minced garlic.
- Add the cooled tortellini to the bowl. Drizzle with olive oil and balsamic vinegar; sprinkle with Italian seasoning, salt, and pepper.
- Toss gently until well combined. Refrigerate for at least 30 minutes before serving to enhance flavors.
