- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 2 tsp instant espresso powder
- ½ cup unsalted butter (room temperature)
- ¾ cup granulated sugar
- 1 large egg
- 1 cup mascarpone cheese
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, espresso powder, and a pinch of salt.
- Cream the butter and sugar in another bowl until fluffy. Add the egg and mix well.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Scoop dough onto prepared baking sheets and bake for 10-12 minutes.
- While cooling, whip mascarpone cheese with vanilla extract until smooth for the filling.
- Once cookies are cool, spread or pipe filling onto half of the cookies and sandwich them together.
