- 3–4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup shredded Jack cheese
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Chopped green onions (for garnish)
- Paprika (for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Rub olive oil over chicken breasts and season generously with salt and pepper.
- In a skillet over medium-high heat, sear each chicken breast until golden brown on both sides (about 5 minutes per side).
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant. Pour in low-sodium chicken broth and let simmer while scraping any bits off the pan.
- Stir in sour cream until well combined and let bubble gently for about 5 minutes.
- Top each chicken breast with shredded Jack cheese, then transfer the skillet to the oven. Bake for around 15 minutes or until cheese is melted and bubbly.
- Garnish with chopped green onions and a sprinkle of paprika before serving.
