  • 1½ cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • ½ cup raspberry preserves (slightly warmed)
  • 2 cups sweetened shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 10-cup oven-safe dome pan.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually alternate adding dry ingredients and milk to the butter mixture until just combined.
  5. Pour half the batter into the prepared pan. Spread warmed raspberry preserves over it, then cover with remaining batter. Swirl gently.
  6. Bake for 45–55 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Coat with coconut and dust with powdered sugar if desired.
