- 2½ cups all-purpose flour

- ½ teaspoon salt
- ¾ cup unsalted butter, room temperature
- 1½ cups granulated sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- ½ cup raspberry preserves (slightly warmed)
- 2 cups sweetened shredded coconut
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 10-cup oven-safe dome pan.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream together the butter and sugar until fluffy. Add eggs one at a time and mix in vanilla.
- Gradually alternate adding dry ingredients and milk to the butter mixture until just combined.
- Pour half the batter into the prepared pan. Spread warmed raspberry preserves over it, then cover with remaining batter. Swirl gently.
- Bake for 45–55 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Coat with coconut and dust with powdered sugar if desired.
