Instructions
- Preheat your griddle to 350°F (180°C) and grease with coconut oil.
- In a mixing bowl, whisk together eggs, pumpkin puree, pumpkin pie spice, milk, and vanilla until smooth.
- Dip each slice of bread into the custard mixture, allowing excess to drip off.
- Cook on the griddle for about 3-4 minutes on each side until golden brown.
- Keep cooked slices warm in a low oven set at 200°F (90°C) until all are done.
- Serve hot topped with butter, maple syrup, powdered sugar, or seasonal toppings.
