- 4 nectarines, pitted and quartered
- 8 ounces burrata cheese, torn
- 8 slices turkey
- 4 ounces cherry tomatoes, halved
- 2 heirloom tomatoes, halved and cut into eighths
- 1/2 cup fresh cherries, pitted and halved
- 1/2 cup mixed baby spring greens
- Olive oil for grilling
- 2 tablespoons fresh lemon juice
- 1 tablespoon white grape juice vinegar
- 1 tablespoon lemon zest
- Fresh herbs (oregano, mint, lemon thyme)
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill or grill pan over medium-high heat.
- Brush nectarines lightly with olive oil and grill for about 2–3 minutes per side until grill marks appear.
- In a small bowl, whisk together vinaigrette ingredients until well combined.
- In a large bowl, toss mixed greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette until evenly coated.
- Top the salad with torn burrata cheese and sliced turkey. Add finishing touches with herbs, salt, and pepper.
