  • 8 ounces burrata cheese, torn
  • 8 slices turkey
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • Olive oil for grilling
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white grape juice vinegar
  • 1 tablespoon lemon zest
  • Fresh herbs (oregano, mint, lemon thyme)
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Brush nectarines lightly with olive oil and grill for about 2–3 minutes per side until grill marks appear.
  3. In a small bowl, whisk together vinaigrette ingredients until well combined.
  4. In a large bowl, toss mixed greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette until evenly coated.
  5. Top the salad with torn burrata cheese and sliced turkey. Add finishing touches with herbs, salt, and pepper.
