Ingredients
- 1 English cucumber
- 2 cups cherry tomatoes
- ½ cup Kalamata olives
- ¼ red onion
- 5 ounces feta cheese
- 1 large avocado
- 2 Tbsp olive oil
- 1 Tbsp apple vinegar
- 1 Tbsp lemon juice
- 1 tsp dried oregano
- Salt & black pepper, to taste
Instructions
- Wash and prepare all vegetables: slice cucumber, halve tomatoes and olives, and thinly slice red onion.
- Dice the avocado and feta cheese into bite-sized pieces.
- In a mixing bowl, gently combine all vegetables with avocado and feta cheese.
- In a separate bowl, whisk together olive oil, apple vinegar, lemon juice, and dried oregano to create the dressing.
- Pour the dressing over the salad mixture and toss gently until everything is evenly coated. Serve immediately or refrigerate for up to an hour before serving.
