Ingredients

  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • Optional: 1/2 tbsp minced garlic

Instructions

  1. Rinse cucumbers and slice at an angle into oval shapes.
  2. Place sliced cucumbers in a bowl; sprinkle with salt and mix. Refrigerate for at least 20 minutes to draw out excess water.
  3. Drain and rinse cucumbers to remove excess salt. Return to the bowl.
  4. Add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic (if using). Mix well until combined.
  5. Serve immediately or chill further for enhanced flavor.
