Ingredients
- 1 1/2 cups unsweetened shredded coconut
- 3 tbsp pure maple syrup (or honey or agave)
- 3 tbsp coconut oil
- 1/4 tsp pure vanilla extract (optional)
- 1/8 tsp salt (optional)
Instructions
- Blend all the ingredients in a blender or food processor until smooth and creamy.
- Take small spoonfuls of the mixture and roll them into balls using your hands. Optionally, roll them in additional shredded coconut.
- Place the balls on parchment or wax paper-lined plates and refrigerate or freeze until firm.
- For an extra treat, dip hardened Coconut Balls in melted chocolate before serving.
- Store any leftovers in an airtight container in the refrigerator or freezer.
