- 1 pound cherries (fresh or frozen, pitted)
- 1/2 cup granulated sugar
- 24 ounces cream cheese (room temperature)
- 3/4 cup granulated sugar
- 1/2 cup sour cream (room temperature)
- 4 large eggs (room temperature)
Instructions
- Preheat oven to 325°F (160°C).
- Mix Oreo crumbs and melted butter; press into a springform pan to form the crust.
- In a saucepan, combine cherries, sugar, and cornstarch; cook until thickened. Puree half for the batter.
- Beat cream cheese until smooth; add sugar, sour cream, pureed cherry filling, and vanilla extract. Mix in eggs one at a time.
- Layer half the batter over the crust, swirl in some cherry mixture, then add remaining batter.
- Bake for about 70 minutes or until set but slightly jiggly in the center.
- Cool at room temperature before refrigerating for at least 4 hours.
