- 2 1/2 cups Oreo crumbs
- 4 tablespoons unsalted butter (melted)
- 1 pound cherries (fresh or frozen, pitted)
- 1/2 cup granulated sugar
- 24 ounces cream cheese (room temperature)
- 3/4 cup granulated sugar
- 1/2 cup sour cream (room temperature)
- 4 large eggs (room temperature)
Instructions
- Preheat oven to 350°F (175°C). Combine Oreo crumbs and melted butter; press into a springform pan to form the crust. Bake for 10 minutes.
- Mix cherries, sugar, and cornstarch in a saucepan; cook until thickened. Cool.
- Beat cream cheese in a bowl; gradually add sugar, then sour cream and vanilla. Add eggs one at a time until just combined.
- Pour half of the batter into the cooled crust, add some cherry filling, followed by remaining batter and more cherry topping if desired.
- Bake for about 70 minutes or until slightly jiggly in the center. Turn off oven and let cool inside for an hour before refrigerating for at least four hours.
