  • 1/2 cup sour cream (room temperature)
  • 4 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C). Combine Oreo crumbs and melted butter; press into a springform pan to form the crust. Bake for 10 minutes.
  2. Mix cherries, sugar, and cornstarch in a saucepan; cook until thickened. Cool.
  3. Beat cream cheese in a bowl; gradually add sugar, then sour cream and vanilla. Add eggs one at a time until just combined.
  4. Pour half of the batter into the cooled crust, add some cherry filling, followed by remaining batter and more cherry topping if desired.
  5. Bake for about 70 minutes or until slightly jiggly in the center. Turn off oven and let cool inside for an hour before refrigerating for at least four hours.
