- 2 cups fresh blueberries
- 2 ripe peaches, sliced
- 1 cup crumbled feta cheese
- 4 cups mixed greens
- 1/4 cup chopped red onion
- 1/4 cup chopped walnuts
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Rinse blueberries under cold water and pat dry; place in a large mixing bowl.
- Wash peaches thoroughly, slice into wedges or thin slices, and add to the bowl.
- Crumble feta cheese over the fruits.
- Wash and dry mixed greens; add them to the bowl.
- Chop red onion finely and sprinkle over the salad; roughly chop walnuts and add on top.
- In a separate bowl, whisk together honey, balsamic vinegar, olive oil, black pepper, and salt.
- Drizzle dressing over salad; gently toss with tongs to combine.
- Taste and adjust seasoning if necessary.
- Serve immediately or chill for up to an hour before serving.
