Instructions
- In a small saucepan, combine blackberries, granulated sugar, and lemon juice over medium heat. Cook for 5-7 minutes until soft.
- Strain the mixture through a fine-mesh strainer to remove seeds; let cool to room temperature.
- Whip cold heavy cream with powdered sugar and vanilla extract in a large mixing bowl until stiff peaks form.
- Gently fold the cooled blackberry puree into the whipped cream until combined.
- Spoon or pipe the mousse into dessert cups and chill for at least 2 hours before serving.
