- 130 g all-purpose flour

- ¾ cup buttermilk, room temperature
- 3 cups fresh or frozen pitted cherries
- ⅓ cup white granulated sugar
- 1 ½ tablespoons lemon juice
- 2 teaspoons unflavored powdered plant-based gelatin
- 2 tablespoons water
- 2 cups thickened cream
- ⅓ cup icing sugar
- 1 teaspoon vanilla extract
- 100 g dark chocolate, finely chopped
- ⅓ cup thickened cream
- 12 fresh cherries
Instructions
- Preheat your oven to 180C (160C fan) / 350F; line muffin pans with paper cases.
- In a bowl, sift flour, cocoa powder, baking powder, baking soda, and salt; mix well.
- In another bowl or mixer, beat melted butter with both sugars until smooth; add eggs one at a time and stir in vanilla extract.
- Gradually combine the flour mixture and buttermilk into the butter-sugar mix without overmixing.
- Fill cupcake cases two-thirds full and bake for 18–24 minutes or until a toothpick comes out clean.
- For cherry filling, simmer cherries with sugar and lemon juice in a saucepan until thickened; cool before use.
- Make stabilized whipped cream by mixing thickened cream with icing sugar and dissolved plant-based gelatin until stiff peaks form.
- Assemble cupcakes by cutting a small hole in each center to fill with cherry jam, then pipe whipped cream on top.
- Prepare chocolate ganache by pouring hot cream over chopped chocolate; stir until smooth and drizzle over cupcakes.
