  • 113 g unsalted butter, melted
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup buttermilk, room temperature
  • 3 cups fresh or frozen pitted cherries
  • ⅓ cup white granulated sugar
  • 1 ½ tablespoons lemon juice
  • 2 teaspoons unflavored powdered plant-based gelatin
  • 2 tablespoons water
  • 2 cups thickened cream
  • ⅓ cup icing sugar
  • 1 teaspoon vanilla extract
  • 100 g dark chocolate, finely chopped
  • ⅓ cup thickened cream
  • 12 fresh cherries

Instructions

  1. Preheat your oven to 180C (160C fan) / 350F; line muffin pans with paper cases.
  2. In a bowl, sift flour, cocoa powder, baking powder, baking soda, and salt; mix well.
  3. In another bowl or mixer, beat melted butter with both sugars until smooth; add eggs one at a time and stir in vanilla extract.
  4. Gradually combine the flour mixture and buttermilk into the butter-sugar mix without overmixing.
  5. Fill cupcake cases two-thirds full and bake for 18–24 minutes or until a toothpick comes out clean.
  6. For cherry filling, simmer cherries with sugar and lemon juice in a saucepan until thickened; cool before use.
  7. Make stabilized whipped cream by mixing thickened cream with icing sugar and dissolved plant-based gelatin until stiff peaks form.
  8. Assemble cupcakes by cutting a small hole in each center to fill with cherry jam, then pipe whipped cream on top.
  9. Prepare chocolate ganache by pouring hot cream over chopped chocolate; stir until smooth and drizzle over cupcakes.
