- 1 ½ cups graham cracker crumbs

Instructions
- Preheat oven to 350°F.
- For the crust, mix graham cracker crumbs, sugar, and melted butter until crumbly. Press into the bottom of a springform pan.
- For the filling, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla extract. Incorporate eggs one at a time on low speed. Fold in rainbow jimmies gently.
- Pour filling over crust and bake for about 60 minutes until edges are set but center is slightly wobbly.
- Turn off oven and let cool inside with the door ajar for an hour before refrigerating for at least four hours or overnight.
- Serve chilled with whipped cream on top.
