  • 2 ½ cups powdered sugar
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp heavy cream
  • ½ cup semisweet chocolate chips
  • ¼ cup heavy cream
  • 1 tbsp rainbow sprinkles
  • 12 maraschino cherries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, egg, vegetable oil, vanilla extract, and mashed banana until smooth.
  4. Gradually add wet ingredients to dry ingredients and mix until just combined.
  5. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let the cupcakes cool before frosting with vanilla buttercream made of butter, powdered sugar, vanilla extract, salt, and heavy cream.
  7. Drizzle melted chocolate ganache over the frosted cupcakes.
