- ½ cup semisweet chocolate chips
- ¼ cup heavy cream
- 1 tbsp rainbow sprinkles
- 12 maraschino cherries
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, vegetable oil, vanilla extract, and mashed banana until smooth.
- Gradually add wet ingredients to dry ingredients and mix until just combined.
- Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool before frosting with vanilla buttercream made of butter, powdered sugar, vanilla extract, salt, and heavy cream.
- Drizzle melted chocolate ganache over the frosted cupcakes.
